Gluten Free Rice Krispies Treats

Gooey with the perfect amount of sweetness, these gluten free rice krispies treats are easily a snack time favourite. Just 10 minutes and 5 ingredients are all you need to make your very own!

Ingredients
  

  • 6 tablespoons (84g) unsalted butter, plus more for greasing
  • 6 cups marshmallows
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 5 cups gluten free rice cereal (I used Nature’s Path Crispy Rice Cereal)

Method
 

  1. Start by greasing an 8”x8” (20cm x 20cm) baking pan with unsalted butter.
  2. In a large pot on the stove, melt the butter over medium heat.
  3. Once the butter has fully melted, add in the marshmallows and mix occasionally until they are fully melted. (I use a silicone spatula to prevent sticking.)
  4. Once the butter and marshmallows are fully melted and well mixed, remove the pot from the heat and add in the vanilla extract and salt. Mix well.
  5. Fold the gluten free rice cereal into the pot and mix well to ensure it is fully coated with the marshmallow and butter mixture.
  6. Using a silicone spatula, or large greased spoon, transfer the rice krispies mix to the prepared pan.
  7. Allow the rice krispies treats to set for 1 hour on the counter or at least 30 minutes in the fridge. Cut into the desired number of squares.

Notes

  • To make it vegan: use vegan butter and marshmallows.
  • To make it dairy free: use dairy free butter.
  • Storage: Store gluten free rice krispies treats in the fridge for 2-3 days or freeze for up to one month in an airtight container.
